Banana Blondie’s

½ cup butter, melted

1 cup brown sugar

1 egg

1 ½ tsp vanilla

¼ tsp salt

1 cup Frankie’s All Purpose Flour

½ cup mashed banana

Brown Sugar Frosting

¼ cup butter

½ cup brown sugar

2 Tbsp milk

1 cup powdered sugar


Preheat oven to 350F. Line a 8X8 baking dish with parchment paper. Set aside.

In a stand mixer combine melted butter and sugar and mix. Add in egg and vanilla and mix until well incorporated. Stir in salt, flour and banana and combine until batter is smooth and even. Spread into pan.

Bake for 25-30 minutes until centre is set. When cool remove from parchment paper and ice with frosting (optional), then serve.

Frosting Method: In a medium sauce pan heat brown sugar, milk and butter stirring until mixture comes to just a boil. Remove from heat and allow to cool for 5 minutes. Stir in powdered sugar and whisk well. Spread on top of blondies and allow frosting to set and blondies to cool completely before cutting into squares.
