Easy Doughnuts

These gluten-free doughnuts taste so yummy you'll want to make some whenever you've got friends coming over.


Ingredients:

2 cups Frankie's All Purpose Flour, sifted
3/4 cup granulated sugar
2 tsp baking powder
1/4 tsp ground nutmeg
1 tsp salt
3/4 cup buttermilk (or 3/4 cup milk with 1 tbsp milk)
2 eggs, lightly beaten
2 tbsp butter, melted


Preheat oven to 425F.  Spray (with non-stick spray) or lightly butter doughnut pan.

In a large mixing bowl sift together flour, sugar, baking powder, nutmeg and salt.  Stir to combine.  Add remaining ingredients and beat well.  Fill each doughnut cup about 2/3 full.

Bake for 7-9 minutes or until the top of the doughnuts spring back when touched.  Let cool in pan for 4-5 minutes before removing from pan.  Finish each doughnut with your favourite topping (see below for toppings).  Doughnuts are best served fresh, but will taste great a few hours later too.

Makes 12 regular sized doughnuts.


Cinnamon sugar

4 tbsp granulated sugar
1 tbsp ground cinnamon
2 tbsp melted butter.

In a shallow bowl combine sugar and cinnamon.  Melt butter in a second dish.  Dip each doughnut in the melted butter and roll in the cinnamon sugar mixture to coat all sides.


Chocolate Glaze

1/2 cup semi sweet chocolate chips
2 tbsp butter
2 tbsp corn syrup

In a medium bowl, combine all ingredients and microwave for 20-30 seconds.  Stir and repeat for another 20-30 seconds.  If the glaze has melted fully but is too thick add 1 tsp water.  Use immediately by dipping one side of the doughnut into the glaze.  (Feel free to add sprinkles on these too.)


Icing Sugar Doughnuts

Put 2/3 cup of icing sugar into a zip lock baggie or tupper wear and add a doughnut.  Close the container and shake until the doughnut is coated.  Repeat with remaining doughnuts.
