Easy Tomato Sauce

This easy tomato sauce starts with just a few ingredients and lets you build from there.

12-14 roma tomatoes, chopped

1 1/2 cups of Green onion or 1 medium onion chopped

2 tsp garlic scape pesto or 2 cloves of garlic, minced

a few sprigs of basil leaves

a few sprigs of thyme leaves

1/2 tsp cayenne pepper


olive oil

Method:  In a large heavy bottom pot add about 1 tablespoon of olive oil.  When hot, add tomatoes.  Cook tomatoes on high for about 2-3 minutes or until they start to break down.  Add in onion, garlic and thyme and cayenne pepper.  Stir well.  Cook for another 2-3 minutes.  Add in basil and stir well.  Taste for seasoning and add salt, additional pepper or any other favourite ingredients at this time.

*For adding meat to your sauce, pre-cook meat in pan and remove before adding tomato, then add meat near the end of making sauce to finish cooking it.
